What You Need
For the dressing:
- 2 tbsp. lemon juice
- 2 tbsp. olive oil
- ¼ tsp. herbs de Provence
- 1 tsp. minced garlic
- 1 tbsp. apple cider vinegar
For the salad:
- 10.5oz. (300g) chicken breast, cooked, chopped
- 1 oz. (30g) feta cheese, crumbled
- 2 cups (150g) iceberg lettuce, chopped
- handful parsley, chopped
- handful basil, chopped
- 1 small red onion, finely chopped
- ¼ cucumber, chopped
- 6 cherry tomatoes, halved
- 10 black olives, sliced
Meal Prep
Before we make the dressing, please mentally prepare yourself for this complex process.
Grab a cup, then mix all the dressing ingredients together into that cup. Then season the mixture to taste with salt and pepper.
Whew!
Next, prepare and chop all of the salad ingredients and place them in a bowl. Use your artistic flair to make a statement with the different colours available.
After meticuluously crafting the salad, pour the dressing over your artwork and mix it all up. There’s a good quote for this about creation and destruction…or maybe it was the circle of life?
Divide the salad between two bowls and enjoy!
